Gobi Cheese Paratha

Paratha is a quick and healthy option for lunch box on a busy day if you do not have enough time to prepare a separate breakfast and a side dish. If you are familiar rolling the parathas, you can make it with any stuffing inside. I add whatever veggies I find in my kitchen for the stuffing. You can even do this with the rice, just add all the veggies along with the rice and cook! but do not compromise on the taste :).  Gobi Parathas are always healthy, adding cheese makes it even more tastier and kids will like it. Addition of onions makes it crispy, you can skip if you do not like.


Ingredients:
Stuffing:
Cauliflower florets - 1 cup
Onion - 1 finely chopped
Turmeric powder - 1/2 tsp
Oil - 1 tbsp
Coriander - few finely chopped
Ginger garlic paste - 1/2 tsp
Garam masala - 1 tsp
Red chilli powder - 1 1/2 tsp
Salt - to taste
Cheese - as needed
Cumin seeds - 1/2 tsp
Curry leaves - 5-6 (optional)
Mango powder - pinch of (optional)

Dough:
Wheat flour -  1 cup
Salt - pinch of
Oil - 2 tsp
Water - To knead the dough

Procedure:
1. Prepare soft dough using the ingredients mentioned in the dough section. and keep aside.
2. Wash the cauliflower florets in hot water. Drain all the water and grind it for few seconds. Squeeze
all the water from ground cauliflower.
3. In a pan heat oil, add cumin seeds, curry leaves, ginger garlic paste, chopped onion. Heat until onion becomes translucent. Add turmeric powder and ground cauliflower.
4. Add chopped coriander, Garam masala, red chili powder, salt, mango powder and mix well.
5. Saute this mixture for 3-4 mins. Allow this to cool down. Your stuffing is ready now.
 6. Make small balls of dough, dust little flour and roll out the dough into small circle. Keep a spoon of stuffing at the center. Grate enough cheese over the stuffing and seal the stuffing with the dough. Make sure that the stuffing should not come out.
7. Dust little flour and roll out the dough with stuffing into circles. Do not apply too much pressure the stuffing might come out.
8. Heat the frying pan and place rolled paratha over it and heat on moderate flame, apply oil over both sides. Heat it until it becomes golden brown color.
  9. Serve this with curd/pickle.
