There are various ways where we can prepare sandwich by adding any of the veggies. If you are looking for an alternative to potato, you can prepare this sandwich. This sandwich I learned from my sister. You can prepare this using the vegetables that we commonly have in our kitchen. I have used Carrot, Cucumber and Cabbage.
Ingredients:
Carrot - 2 small grated
Cucumber - 2 small grated
Cabbage - Grated 1/2 cup
Green chili - 1
Onion - 1 small finely chopped
Fine semolina - 1 tbsp
Mayonnaise / Milk cream - 1 tbsp
Salt - as per taste
Sugar - 1 tsp
Pepper powder - pinch of
Bread slices - 7-8
Ketchup - as needed (optional)
Procedure :
1. Finely chop / grate all the required vegetables as shown in pic. You can also give a pulse to the carrots and cabbage separately in mixer grinder.
2. Dry roast semolina for few seconds until it changes its color a bit.
3. Mix all the chopped vegetables, roasted semolina in a mixing bowl. Add salt, sugar, pepper powder. Allow this to rest for 4-5 mins.
4. Add cream / Mayonnaise mix well.5. Spread this mix as a thin layer over bread. Apply butter on the other side of bread.
6. Toast the bread on both the sides for few minutes.
7. Apply ketch up on the side where the vegetable mix is applied. And Place the 2 breads on top of each other and diagonally cut into slices.
8. Serve this with Ketchup.
Notes:
- You can also add chopped coriander to this.
- If serving for small kids, you can skip adding green chili.
- Adjust the qunatity of Mayonnaise based on your requirement.
- Adding ketchup in step 7 is optional. If you do not like you can serve the ketch up separately.
