I'm back in the U.S. after a wonderful two weeks spent visiting Turkey and Kenya, and once I get over the jetlag from a 24-hour travel day I'll post a few pictures from that trip. But this blog is primarily about delicious low-carb recipes, and it's time to get back to sharing something good to eat!
While I was traveling I scheduled a post for the Ridiculously Easy Blue Cheese Coleslaw that I was infatuated with the few weeks before my trip, and this recipe for Slow Cooker Buffalo Chicken and Blue Cheese Cabbage Bowl uses that easy coleslaw as the base for a cabbage bowl with buffalo chicken and blue cheese crumbles. The idea is similar to the Slow Cooker Buffalo Chicken Cauliflower Rice Bowl I made earlier in May and if you're not a cabbage fan you might like that one instead, but I loved the crisp coleslaw with the buffalo chicken in this dish.
Everything about this recipe is easy and the combination of hot buffalo chicken plus cooling coleslaw makes this a great after-work dinner during the summer, when using the slow cooker keeps your house cool.
