Commercial blue cheese dressing and buttermilk make the dressing for this Ridiculously Easy Blue Cheese Coleslaw. Add some crumbled blue cheese if you really want a strong blue cheese flavor!
Way back in the archives on this blog I have a recipe for Blue Cheese Coleslaw. That's actually a really delicious recipe if you're the kind of person who wants coleslaw made completely from scratch, but a few years ago I started making Ridiculously Easy Blue Cheese Coleslaw with a dressing that's just my favorite commercial blue cheese dressing thinned with some buttermilk, and I never went back to the from-scratch dressing after that. I also eliminated carrots from my original blue cheese coleslaw which makes this a super low-carb recipe, and added more purple cabbage for extra color.
I'm pretty crazy over this Ridiculously Easy Blue Cheese Coleslaw even when I don't have any blue cheese crumbles to mix into the salad, but if you have crumbled blue cheese to add, that does take it completely over the top. I keep the shredded cabbage mixture in a plastic container in the fridge and mix in the dressing right before I eat it, and I could happily eat this for lunch most any time of year.
