This recipe was a very happy, thrown-together accident. It wasn't even my accident it was a friend of mine from church. She was hosting a lunch get-together for a bunch of us new mom's. She set out a large platter of grilled chicken with peanut sauce, some wraps, a bunch of fresh fixin's, and some hummus. It all looked and smelled so delicious and I was thankful she had chosen such a healthy lunch for all of us new baby-bodied mom's. But hummus and peanut sauce? We're talkin' Asian and Mediterranean? How does that work?
Oh it works alright. And it works good. After I scarfed down two wraps and I had gone home, I picked up my own bottle of peanut sauce and made these that night for supper. Steve was hooked too. I get it...the nuttiness of the tahini in the hummus goes very nicely with the peanutty sauce. You definitely want to get a good peanut sauce you love though...ours is lovely and peanutty and rich and spicy. Delicious.
I don't feel bad at all when I reach for seconds of this one.

Serves 4
4 boneless, skinless chicken thighs (or 2 breasts) or 2 cups leftover shredded chicken
Your favorite peanut sauce (we love PC Szechuan Peanut Sauce)
Hummus (homemade or store bought)
Whole wheat tortilla wraps
½ cucumber, quartered
1 tomato, deseeded and chopped
Preheat your grill to medium. Season up the chicken with salt and pepper and throw it on your grill once it's hot. It really only needs about 5 minutes per side, just make sure you flip it halfway through. The last five minutes of grilling, brush on some peanut sauce to both sides of the chicken. When the chicken comes off the grill, let it rest for about 5 minutes then either shred it with two forks or chop into bite-sized pieces.
While the chicken is resting, chop the cucumber into ½ inch slices and then quarter them. Remove the center from your tomato with it sitting face up on the chopping board. Then turn on its side and cut in half. Reach inside and pull out all the juice and seeds, leaving the tomato flesh behind. This will keep your wraps from getting soggy. Chop your tomato into small chunks.
When you are ready to eat, spread some hummus on a tortilla and top with tomatoes, cucumbers, shredded chicken and more peanut sauce. Don't feel shy just to slather it on there ;)

THE RESULTS?
Healthy AND delicious! Great combo. And so is the hummus and peanut sauce. A perfect harmony of mediterranean and asian flavors. It's a great summer grilling recipe as a well as fantastic picnic fare. You'll love it.
