Mooli Paratha / Radish Paratha

Radish is the most healthiest vegetable but many of us don't like it because of its bitterness. Radish is used in many ways in Indian cuisine like in the form of side dish, in paratha, in salads etc.. It becomes more tastier when used in parathas. It has got lots of nutritional benefits, I remember my grand-mom used to have it since she was suffering from diabetes. I first prepare the mooli sabzi and use it as stuffing for the paratha.


Stuffing Ingredients:

Radish
5-6 grated
Green chilly
2 finely chopped
Salt
To taste
Turmeric powder
½ teas spoon
Coriander powder(optional)
½ tea spoon
Cumin seeds/ cumin powder
½ tea spoon
Amchur powder/mango powder (optional)
½ tea spoon
Coriander
Handful of finely chopped

Dough:

Wheat flour
1 ½ cup
Water
As required for kneading the dough
Salt
To taste
Oil
2 tea spoon

Procedure:
1. Knead the wheat flour to soft dough by adding little salt, water and a 2 tea spoons of oil and allow it for rest for about 15-20 mins.
2. Wash radish and grate it. Squeeze out all excess water.
3. In a frying pan heat oil on a medium flame, when heated add cumin powder, green chilly sauté for few seconds.


4. Add the grated radish, turmeric powder, salt, amchur powder to this, mix well. Fry this for few mins 4-5 mins.
5. Make small balls of dough, dust little flour and roll out the dough into small circle. Keep a spoon of radish stuffing at the center and seal the dough with the stuffing inside.


6. Dust little flour and roll out the dough with stuffing into circles. Do not apply too much pressure the stuffing might come out.
7. Heat the tawa and place rolled paratha over it and heat on moderate flame, apply oil over both sides. Heat it until it becomes golden brown color.


8. Serve this with curd / pickle.


Notes:

  • Even if we take 5-6 radish, after grating we can see that it looks decreased in quantity. You can adjust the numbers according to the stuffing you want.
  • You have to be very gentle while spreading the rolla with stuffing, since it will be very smooth chances of coming out is more.
  • Mango powder and coriander are optional. I added mango powder because I like the sour taste. If you have added chopped coriander then you need not add coriander powder.
  • You can also add red chilly powder if you like it be more spicy.
