Oats Upma

I had got a packet of oats from the stores long time back when had decided to start my dieting, but unfortunately never used it :) so thought of preparing something out of oats for my lil one and hence prepared this recipe. Instead of directly adding the veggies and frying them I had to boil and then use so that my son doesn't find any trouble in getting this digested :) The procedure I have used here is very simple and the upma tasted delicious as well. This can be a very healthy food for your kid.


Ingredients:

Oats
1 cup
Potato
1 small
Tomato
1 small
Cauliflower
5-6 small florets
Capsicum
¼ of the full capsicum
Green peas
Handful of
Onion
1 small finely chopped
coriander
For garnishing
Ginger
Half inch piece
Ghee
½  table spoon
Cumin seeds
½ tea spoon
Red chilly powder
½ tea spoon
Turmeric powder
½ tea spoon
Procedure:
  1. Wash all the vegetables like potato, tomato, cauliflower, capsicum, peas thoroughly in water and keep for boiling in pressure cooker for upto 3 whistels. 
  2. Meanwhile roast the oats on a medium flame with a tea spoon of ghee until light brown in color. Make sure that oats do not get burnt, stir in between.
  3. After the pressure is released from the cooker take out all veggies and allow it cool and mash them.
    4. Heat a pan over a medium flame add a table spoon of ghee, when the ghee is heated add cumin
        seeds, ginger, chopped onion and salt. Fry it until the onions become translucent.
    5. Meanwhile you can keep a glass of water for boiling in a vessel on a high flame which can be used
        at the end of the procedure.
    6. Add the mashed vegetables, turmeric powder, red chilly powder, salt and mix well. Keep it for
3-4 mins.Add the roasted oats mix well and keep it on a medium flame for 3-4 mins.
    7. Add boiled water to this mix well cover the lid and cook for 5-6 mins. Spread chopped coriander
        over this.

   8. Serve this hot with tomato ketchup.


Notes:
  • You can also boil carrot and add to this. I have added the vegetables that i had in my kitchen.
  • Since I prepared this for my lil son I had to boil the vegetables. You can simply  chop vegetables finely and fry them as we do for usual upma.
