I say this recipe is famous, because I don't know of any other meatloaf recipe my family will actually eat. I grew up loving my Dad's meatloaf....the sauce is kind of like a sweet and sour sauce and tastes amazing over mashed potatoes. We always make extra just for this purpose. My husband grew up eating meatloaf where the topping was just ketchup...he said it bakes on into a rubbery-tomato layer and is pretty disgusting. I've never actually eaten it this way, but can't imagine it would be very appetizing. Luckily I've converted him to being a meatloaf lover with this recipe.

Serves 4
1/4 cup bread crumbs
1 egg
1/4 onion, chopped finely (I like it grated so I don't get any chunks)
1 tsp oregano
1 clove garlic, chopped
Salt and pepper
Sauce:
2 tbsp brown sugar
2 tbsp vinegar
1 tsp mustard
1/2 cup ketchup
1/2 cup water
*I actually double this sauce because it is so good, that we like to pour it over our mashed potatoes as well. Do whatever suits your fancy.
Preheat oven to 350 degrees.
In a bowl, mix together ground beef, bread crumbs, egg, onion, garlic, oregano, salt and pepper and then place in a loaf pan. Bake in the oven for 30 minutes.
In the meantime, in a small saucepan heated to medium heat, combine brown sugar, vinegar, mustard, ketchup and water. Simmer for 10 minutes until the ingredients are combined and slightly thickened. Remove from heat.
Once the meatloaf has baked for 30 minutes, pour on sauce (or if you double the recipe, pour only half) and place back in the oven to bake for another 45 minutes. Serve with mashed potatoes and pour extra sauce over mashed potatoes and meatloaf.

THE RESULTS?
Mmm...mmm....good. I've never eaten another meatloaf before, but I'm not sure that meatloaves usually have as much sauce as this one. It's very saucy. When you slice it out of the pan there is a ton of juices in there. Which just means it's moist and delicous. If you doubled the sauce recipe, serve the extra sauce over your mashed potatoes and extra on your meatloaf. It's delicous.
