Koshimbhir is the traditional way of preparing a salad in in Maharashtra using roasted groundnut powder, which adds a kick in the taste :) Although the most famous Koshimbhir is kakadi Koshimbhir (prepared using kakadi (cucumber), raw onions and tomatoes ), this is healthy and quick recipe with very less number of ingredients.

Ingredients:
Beetroots | 2 small grated |
Green chilli | 1 sliced |
Galic | 5-6 flakes chopped |
Ginger | 1/2 inch piece grated |
Coriander | For garnishing |
Salt | ½ tea spoon |
Cumin seeds | ½ tea spoon |
Oil | ½ table spoon |
Roasted groundnut powder | 3-4 tea spoons |
Sugar | ½ tea spoon |
Procedure:
- Wash the beetroot remove the outer layer and grate.
- Heat oil in pan over medium flame add cumin seeds, sliced green chilli, chopped ginger and garlic sauté for few seconds.
- Add grated beetroot, sugar, salt and mix well. Fry this for 4-5 mins.
- Add roasted groundnut powder and mix well. Fry this well for another 3-4 mins.
- Garnish this with chopped coriander.
- You can also add curd at the end and mix well.
