Vangyachi Bhaji

This is simple brinjal sabzi with the addition of grated coconut and roasted peanut powder which is usually included in the festive meal. We can prepare this sabzi only with the addition of roasted peanut powder so that it becomes quick.

Ingredients:

Brinjal
4-5
Garlic flakes
5-6 finely chopped
Oil
1 table spoon
Mustard seeds
½ tea spoon
Cumin seeds
½ tea spoon
Curry leaves
5-6
Red chilli powder
2 tea spoon
Salt
To taste
Dry grated coconut
1 table spoon
Roasted peanut powder
3-4 tea spoon
Coriander leaves
Few
Procedure:
1. Wash the brinjal and chop it into cubes. Keep it in water to avoid oxidation.
2. Heat oil in heavy bottomed pan when heated add mustard seeds, cumin seeds. When mustard seeds splutter add curry leaves and chopped garlic sauté for few seconds.
3. Add chopped brinjal, salt, red chilli powder and mix well.
4. Add little water and cover the pan with lid. Cook this over low flame for around 8-10 mins until the brinjal is completely cooked.
5. Garnish this with chopped coriander leaves.

Notes:
  • Adding dry coconut is optional you can skip it.
